Assist and plan
catering events for clients
Work with chefs to
provide potential menu plans and pricing
with Purchasers bakery and kitchen to ensure provision of food for catering
o Support F&B manager on
drink creation and roll out.
o Oversee and support Jr.
o Support Marketing and
Communication Director for catering for lunches and cocktail.
o Work with Marketing and
Communication Director and Chef and Master Baker for specials and advertising
with Marketing and Communication Director to
actively market online and via email
Assist with the
creation of hard copy marketing material
Work with finance to manage the catering budget.
Create staff and position schedule for each
shift and conducting daily shift briefing.
Monitor daily of hygiene and work practice in
both service and culinary production.
o Ensure all machines and
equipment are kept in good condition and make the required repairs if needed.
Maintain site repairs to internal and external
environment and advise finance of all potential repair expenditure
Conduct technical skill training, service
sequence to staffs and apprentices (FOH)
o Review weekly requisition
orders to ensure front of house and culinary maintain the correct stock level
of ingredients or other consumable items in the site.
o Sign off weekly and monthly
Provide constant leadership, counseling, advice
and feedback to staff and ensure that correct disciplinary procedures are
followed if necessary.
Create an environment of openness and trust,
with constant feedback and performance coaching to station managers and staffs
o Review constantly the product
range to ensure quality standards are maintained.
o Work to meet sales targets
and support FoH staff to meet targets through leadership and training
o Taking responsibility for
liaising with customers and handling customer complaints with upmost care and
ensure customer satisfaction.
Take on at least 2
management shifts/week to ensure quality of operations.
